Description
The Falcon HC36HPNI Mobile Proofer Cabinet is designed for professional kitchens seeking efficiency and versatility. This full-height cabinet measures 23"W x 33.15"D x 66.5"H and features a robust heavy-duty aluminum construction. It accommodates up to 36 standard 18" x 26" pans, making it ideal for high-volume operations. With a dual-function capability, this non-insulated heater/proofer cabinet offers both proofing and heating modes. The proof mode maintains humidity levels from 30% to 95%, while the heat mode reaches nominal temperatures up to 185°F (85°C). An integrated air baffle and circulating air blower ensure even heat distribution throughout the cabinet. Mobility is enhanced with (2) swivel plate casters and (2) swivel/brake plate casters equipped with polyurethane tread, allowing for easy maneuverability and stability. The unit operates at 1500 watts on a 120v/60/1-ph power supply and is certified cETLus, UL, and NSF, ensuring compliance with safety and sanitation standards.
