The FWE PH-1826-15 is a mobile heated holding and proofing cabinet designed for optimal food preservation and preparation. This 3/4 height unit features a fully insulated construction, ensuring consistent temperature and humidity levels. It accommodates up to ten pairs of adjustable tray slides, spaced 4-1/2 inches apart, allowing for versatile pan configurations, including ten 18" x 26" or ten 12" x 20" pans. Equipped with a field-reversible door and a recessed antimicrobial handle, this cabinet promotes easy access and hygiene. The built-in humidifier and individual controls for temperature and moisture provide precise environment management, while an optional range thermometer enhances monitoring capabilities. The removable water reservoir simplifies maintenance, and recessed hand grips on each side facilitate mobility. Constructed with durable stainless steel for both the interior and exterior, the cabinet is built to withstand the rigors of a commercial kitchen. It rolls smoothly on 5" casters, featuring two rigid and two swivel wheels with brakes for stability.
