Description
The Metro C537-MFC-U-BU is a mobile heated holding and proofing cabinet designed for optimal food preservation and preparation. This 3/4 height cabinet features the innovative C5™ 3 Series Moisture Heated technology, ensuring consistent temperature and humidity control. The Blue Insulation Armour™ enhances energy efficiency while maintaining the desired environment. Equipped with a clear polycarbonate door for easy visibility, the cabinet includes a removable bottom mount control module for user-friendly operation. The thermostat can be set up to 200°F, allowing for precise temperature management. Its moisture control feature helps maintain the ideal conditions for proofing dough. The cabinet accommodates a variety of pan sizes with universal wire slides on 3" centers, adjustable in 1 1/2" increments, supporting up to 14 pans of 18" x 26" or 26 pans of 12" x 20" x 2 1/2". Mobility is facilitated by 5" casters, two of which are equipped with brakes for stability. Constructed from durable aluminum, this unit operates on 120v/60/1 ph with a power output of 2000 watts and 16.7 amps, meeting cULus and NSF standards for safety and performance.
