The Metro C539-MDC-U-GY is a mobile heated holding and proofing cabinet designed for optimal food preservation and preparation. This full-height cabinet features C5™ 3 Series Moisture Heated technology, ensuring consistent temperature and humidity control up to 200°F. Its Grey Insulation Armour™ provides superior insulation, enhancing energy efficiency. Equipped with durable Dutch clear polycarbonate doors, the cabinet allows for easy visibility of contents while maintaining a stable environment. The removable bottom mount control module simplifies operation and maintenance. The thermostat offers precise moisture control, essential for proofing dough and keeping food warm. The cabinet includes universal wire slides on 3" centers, adjustable in 1 1/2" increments, accommodating up to 18 full-size 18" x 26" pans or 34 half-size 12" x 20" x 2 1/2" pans.
